Stir Fry Tomato and eggplant

Yesterday this city met typhoon weather again.But only Weather forecast showed it is so strong.In fact it only brought rain and no others.:)But typhoon let temperature be comfortable and have a rest day for some companies.

When you cooked more and more dishes, you will think what is the next one?Stir fry tomato and eggplant is innovative dish for me.Sometimes I want to try new recipe because it is a interesting thing.I never cook it so I don’t know what is the success criteria . I may just try. Only it will be delicious.That is perfect.

Eggplant is rich nutrition ingredient.And it also have many cooking ways in Chinese recipes.Tomato is make it tasty with sour feeling.Some guys like to cut eggplant into slices. But I try to cut eggplant into small cubes.The tomato also be cut into small cubes too.Some green callion, garlic and ginger enjoyed together.A nice homely dish is finished.

Recently I try many dishes with tomato.Not only Chinese people like tomato dish but also are foreinger’s favorite.

Tomato could join in fish, vegetables, tofu and many others ingredients.They are will become perfect groups.

  1. Two eggplant,cut into cubes
  2. Three tomato, cut into cubes.
  3. some green scallion,chopped
  4. several cloves of garlic, chopped
  5. 1 table spoon oil
  6. 1/2 tea spoon salt
  1. Heated oil then pour eggplant cubes,garlic, little salt,
  2. Stir fry for 5 minuted till eggplant became soft and ok.
  3. Dish them out
  4. Heated rest 1/2 spoon oil, pour tomato cubes then stir fry till soft.
  5. Add scallion and eggplat, rest salt ,stir fry for some seconds.
  6. Ok, finished.
